Manggarai is one of the regions on the island of Flores, Indonesia, which is famous for its high quality coffee production. Topographically, Kabupaten Manggarai is a highland area dominated by undulating land surface with a land slope of ≥40% (mountainous), covering 38.36% and a land slope between 15%-40%, covering 55.41% of the area of Kabupaten Manggarai. Manggarai Arabica Flores Coffee farmers have applied the principles of good processing practices.

MPIGKAFM
The Flores Arabica Coffee Geographical Indication Protection Society (MPIG) was formed in 2015 to accommodate coffee farmers in the Greater Manggarai area to increase coffee productivity and quality in order to produce quality coffee commodities, competitive and able to provide good economic value for coffee farmers. MPIGKAF consistently develops and fights for Manggarai Arabica Flores coffee to be increasingly recognised and favoured by the wider community, both at home and abroad.

Characteristics of Arabica Flores Manggarai Coffee

Arabica Flores Manggarai coffee is obtained by processing red fruit coffee at least 95%. Manual sorting and mining using water followed by pulper to separate the red skin from the fruit. The fruit is sorted again to separate the skin that remains on the fruit and then fermented for 12 to 36 hours, depending on consumer demand. To produce dry milled wet processing coffee, horn skin coffee is dried until it reaches a moisture content of 11-12%.

Arabica Flores Manggarai coffee has herbal, floral and spicy aroma, with medium to high viscosity, acidity ranging from ‘moderately high’ to ‘high’ category, and uniform high sweetness. Arabica Flores Manggarai coffee has a non-bitter and astringent flavour, as Manggarai Arabica coffee farmers practice selective picking (only red coffee beans are picked) during harvest.
